The other night, I decided to make a cucumber and red onion salad. My husband was working out, so I was in the kitchen alone, which is kind of dangerous if you know me. I’ve never enjoyed chopping or dicing, and I’m definitely not good at it, no matter how much I do it. The other night was no exception.
I started cutting the onion and instead massacred part of it. I mean, it wasn’t terrible, but I was thinking, I don’t think this is the way you cut an onion.
I stood there for a few minutes in a quandary. Do I bother my husband while he’s working out and ask him, then wait for the long-winded answer, or do I figure it out on my own? I ended up figuring it out on my own, and I think I did a pretty decent job.
Anyway, the salad came out pretty yummy. I know I could’ve added tomato, but I try not to consume a lot of tomatoes because I have GERD.
It’s just a simple, refreshing salad with cucumbers, sliced red onion, and a drizzle of fat-free Italian dressing over it. Mix it up, and it goes great with chicken or burgers.
You can also put drained tuna fish and white or red beans in there as well. Just remember that too many beans have the possibility of making you bloated and gassy.
Fun fact: I never cry when I chop onions. Not that I chop them often, but when I do, my eyes don’t tear up like most people. They might sting a little, but they definitely don’t tear up.

I chew gum to chop an onion and then the eyes don't water. It seriously works. My fave summer salad is a Cobb salad: romaine (instead of ice berg), chopped boiled egg, turkey bacon crumbled, granny smith apple slices, cheddar cheese in cubes, and a creamy ranch dressing of lemon vinaigrette.
